Melissa’s Deluxe Pantry Box Recipe Series: Cheesy Polenta and Garlic Potato Casserole

I am going to show you how to make 5 recipes using these products plus ingredients you may have in your kitchen pantry and refrigerator. You may have to add a few ingredients to your weekly shopping list, but it should be very minimal. The fourth recipe is Cheesy Polenta and Garlic Potato Casserole. This is a quick recipe using 3 Melissa’s products: Polenta, Dutch Yellow Potatoes, and Chopped Garlic.

 

Cheesy Polenta and Garlic Potato Casserole by OC Food Diva

Prep time: 5 minutes

Cook time: 50 minutes

Serves: 9

 

Ingredients:

1.5 lb bag Melissa’s Baby Dutch Yellow Potatoes

2 tsp Melissa’s Chopped Garlic

3 tbsp butter

1 cup whole milk, divided

½ tsp salt

1 lb. package Melissa’s Polenta, cubed

2 cups cheddar, shredded

 

Directions:

  1. Preheat oven to 450°F.
  2. In a large pot filled halfway with water, boil potatoes until tender, about 15-20 minutes. Drain the potatoes in a strainer. Place in a large bowl and start mashing. Add in garlic, butter, ½ cup milk and salt until creamy texture achieved. Cover and set aside.
  3. In a medium saucepan on low heat, combine ½ cup milk and polenta until milk starts to bubble. When polenta is creamy, turn off heat and add cheese. Mix until creamy and gooey.
  4. In a 9” x 9” pan, place potato mixture on bottom and pat down until layer is even. Pour polenta mixture on top of potatoes. Spread around evenly to cover potato layer. Bake in oven for 15-20 minutes until top is golden brown and puffed up.
  5. Remove from oven and cool for 5 minutes before serving.
