includes Steamed Lentils, Steamed Red Kidney Beans, Steamed Six Bean Medley,
Peeled & Steamed Chickpeas, Steamed Artichoke Hearts, Steamed Baby
Beets, Perfect Sweet Onions, Chopped Garlic, Cooked Quinoa, Dutch Yellow®
Potatoes, Polenta, Italian Seasoning Grinder, Dried Mushroom Medley,
Cranberry Clean Snax®.
I am going to show you how to make 5 recipes using these products plus
ingredients you may have in your kitchen pantry and refrigerator. You may
have to add a few ingredients to your weekly shopping list, but it should be
very minimal. The second recipe is Baby Beet Salad. This is a quick recipe
using 4 Melissa’s products: Steamed Baby Beets, Perfect Sweet Onions,
Chopped Garlic, and Italian Seasoning Grinder.
Baby Beet Salad by OC Food Diva
Prep time: 10 minutes
Serves: 1-2
Ingredients:
¼ cup lime juice
¼ cup extra virgin olive oil
2 tbsp balsamic vinegar
1 tsp Melissa’s Blue Agave Syrup
2 tsp Dijon mustard
1 tsp Melissa’s Italian Seasoning
1 tsp Melissa’s Chopped Garlic
8 oz. package Melissa’s Steamed Baby Beets, sliced
¼ Melissa’s Perfect Sweet Onion, thinly sliced
2 tbsp cotija cheese
2 tbsp cilantro, chopped
Directions:
- In a small bowl, whisk together lime juice, olive oil, balsamic vinegar, agave syrup, Dijon mustard, Italian seasoning, and garlic. Set aside.

To serve, place beets in a serving plate/bowl and fan out slightly. Layer
onion on top of beets and pour on dressing. Top with cilantro and cotija.
Serve immediately.
