The Deluxe Pantry Box includes Steamed Lentils, Steamed Red Kidney Beans, Steamed Six Bean Medley, Peeled & Steamed Chickpeas, Steamed Artichoke Hearts, Steamed Baby Beets, Perfect Sweet Onions, Chopped Garlic, Cooked Quinoa, Dutch Yellow® Potatoes, Polenta, Italian Seasoning Grinder, Dried Mushroom Medley, Cranberry Clean Snax®.
I am going to show you how to make 5 recipes using these products plus ingredients you may have in your kitchen pantry and refrigerator. You may have to add a few ingredients to your weekly shopping list, but it should be very minimal. The fifth recipe is Quinoa Cranberry Pudding Parfait. This is a quick recipe using 2 Melissa’s products: Cooked Quinoa and Cranberry Clean Snax.
Quinoa Cranberry Pudding Parfait by OC Food Diva
Prep time: 5 minutes
Cook time: 10 minutes
Serves: 4-6
Ingredients:
17.63 oz package Melissa’s Cooked Quinoa, cubed
2 cups whole milk
1 ripe banana
¼ cup sugar
1 cup dried cranberries
1 tbsp butter
1 package Melissa’s Cranberry Clean Snax, chopped
1 can whipped cream
Directions:
- Combine quinoa, milk, banana, sugar, and dried cranberries in a food process. Blend until smooth.
- Place quinoa pudding in a medium saucepan. Heat on medium heat and add butter. Warm up until butter is melted. Turn off heat. Divide pudding between 4-6 ramekins and refrigerate overnight.
- To serve, remove pudding from refrigerator. Layer on Clean Snax and top with whipped cream. Serve immediately.
