Melissa’s Deluxe Pantry Box Recipe Series: Hummus with Fried Artichoke Hearts

I am going to show you how to make 5 recipes using these products plus ingredients you may have in your kitchen pantry and refrigerator. You may have to add a few ingredients to your weekly shopping list, but it should be very minimal. 

The first recipe is Hummus with Fried Artichoke Hearts. This is a quick recipe using 3 Melissa’s products: Peeled & Steamed Chickpeas, Steamed Artichoke Hearts, and Chopped Garlic.


Hummus with Fried Artichoke Hearts by OC Food Diva
Prep time: 10 minutes
Cook time: 5 minutes

Ingredients:
6.34 oz package Melissa’s Steamed Artichoke Hearts
½ cup cornstarch
9 oz package Melissa’s Peeled & Steamed Chickpeas
7 tbsp extra virgin olive oil, divided
3 tbsp tahini
3 tbsp lime juice
1 tsp Melissa’s Chopped Garlic
1 tsp salt
½ tsp black pepper
Dash of paprika
2 pitas, cut into 8 wedges

Directions:
  1. Preheat deep fryer to 375°F.
  2. Dredge artichoke hearts in cornstarch. Tap off excess cornstarch. Fry until crispy and golden brown, about 2-3 minutes. Drain on paper towels and season lightly with salt and pepper. Set aside.
  3. Combine chickpeas, 5 tablespoons olive oil, tahini, lime juice, garlic, salt, and black pepper in a food processor. Blend until smooth. Transfer to a bowl and make a well in the middle. Pour 2 tablespoons olive oil into well and sprinkle with a dash of paprika.
  4. To serve, arrange fried artichokes and pita around hummus bowl and enjoy!
