The food
truck craze has died down quite a bit since 2010. Some trucks have kept the
momentum going with scheduled stops and catering while others just fade into
memory. But some trucks who proved their concepts, made the move to brick and
mortar locations. This is one of those successes. Luis Flores, owner of TheViking Truck and Porko Rico BBQ, teamed
up with Mike Dimmitt, formerly of Garlicscapes Truck, to open up Meat Up BBQ,
where you will see some favorites from the trucks along with inventive
California-style barbeque and 25 local craft beers on tap.
Deep Fried Artichokes ($8) are fresh artichoke
quarters dusted with garlic seasoning, fried up until crispy, and served with
fresh lemon, cool garlic cream, and garlic infused butter. The batter is very
light for a good crispy exterior and juicy, sweet interior. Just be careful,
since this is a hot-oil deep fried dish, the artichoke juices are quite hot, so
let it rest for a little bit before diving in for your first bite. Rating:

The Mighty Zeus ($12) is a sandwich made with smoked
tri-tip, olive tapenade, fried cherry peppers, garlic aioli, feta cheese, and
fresh greens. The OC Baking Co. bread holds up really well to all the juices and
sauce. The thinly sliced tri-tip is tender with an herby, Mediterranean flavor
profile, like a California-style gyro. The olive relish adds some acidity and
the peppers provide a little bit of heat. Rating: 4.3/5
St. Louis Ribs (Half rack - $18, Full rack - $25) are
classic spare pork ribs that are smoked for 6 hours, chargrill finished, and
sauced with cracked pepper BBQ sauce. These type of meat plates are served with
two Classic Sides and cornbread. The ribs have a good smoked flavor and are
“competition” tender with a good bite without it “falling off the bone” (which
means overcooked in BBQ competition terms). The smoking and chargrill give it a
beautiful caramelized bark on the outside. Cornbread is moist and not too
sweet. Rating: 4.3/5
Chili
Verde ($4) is a cup of pulled pork chili verde, tomatillos, and mild peppers in
a seasoned broth. This is fantastic! It has a really good green chile flavor.
The pork is pulled in just the right consistency to act like a “mop” to capture
the flavor of the broth. Rating: 4.8/5
Hellbilly
Chili ($4) is EPIC Beef and 3-beef chili topped with cheese, onion, and Scape
sauce. This meaty chili tastes like kettle-cooked style chili. It is stick-to-your-ribs
good! Rating: 4.5/5
Mac N
Cheese ($4) is classic mac & cheese topped with herbs and bread crumbs. The
in-house béchamel is fantastic! It is rich, creamy and very cheesy. The
macaroni is cooked to al dente so it has a nice bite to without being soggy at
all. Rating: 4/5
