Protein-Packed Cranberry Buttermilk Mug Cake recipe with Burt’s Bees™ Vanilla Protein + Healthy Radiance

Again, I did not want to go the usual route with a smoothie or protein shake. I wanted to come up with something different, delicious, and something for someone who does not like chocolate. I love sweet, tangy dried cranberries, but instead of a muffin, why not infuse it into a single-serving mug cake – dense cake and cranberries in every bite. Enjoy!

Protein-Packed Cranberry Buttermilk Mug Cake by OC Food Diva
Serves 1

1 egg
2 tbsp agave syrup
6 tbsp buttermilk
1 tsp vanilla extract
1/3 cup buttermilk pancake mix
1 scoop Burt’s Bees Vanilla Protein + Healthy Radiance
2 tbsp dried cranberries


  1. Mix egg, agave syrup, buttermilk, and vanilla extract in a blender or NutriBullet until blended.
  2. Add pancake mix, vanilla protein powder, and blend until incorporated.
  3. Pour mixture into a large mug (16 oz. size mug) and add dried cranberries. Mix until evenly dispersed.
  4. Put mug on a plate and microwave for 2 minutes. Batter may overflow a little depending on the size of your mug.
  5. Let it cool for a few minutes and serve. The cake may deflate as it cools like a soufflé.
